I love soup! For me, during the winter, soup is the perfect meal for every time I feel hungry. It’s a healthy, warm and easy solution: just use the vegetables you have in your fridge and voilá. Pea and mint soup is classic and one of the easiest soups you can do. Frozen peas can be used directly from the freezer and cook really fast. Combined with fresh mint, you can taste the freshness of the garden in a big hot bowl. I like to serve it with croutons and garnish with some peas, mint leaves and a swirl of cream.
Pea and Mint Soup
A healthy, delicious and easy to make soup.
Organize the ingredients and props before the start. Using a board and a good knife, peel and dice the onion, garlic and potatoes.
Place a saucepan over medium heat. Add the olive oil, diced onion and garlic and saute until slightly golden. Then, add the diced potatoes and vegetable stock, and let it simmer until the potatoes are soft and cook.
Add the peas and 2 tbsp of single cream e let it simmer for 5 minutes. Give it a taste and add salt and pepper if necessary.
Add the mint leaves and blend it using a hand mixer or a blender. To serve, garnish with some fresh peas, mint leaves and a swirl of cream. It goes very nice with croutons or salty popcorn. Enjoy!
